Admiral Adama Semillon 2017
Admiral Adama Semillon is the gritty cousin of our Admiral Ackbar Semillon made up in South Burnett QLD. The grapes were harvested on Australia day, crushed-destemmed and fermented on skins. It macerated on skins following primary ferment to maximise the extraction of the silky Semillon tannins which complement the mandarin and peach aromatics. A really beguiling wine.

100% Semillon. Fruit left to ferment on skins ensuring whole berries remained. Macerating on skins for 7 days post ferment. Oxidatively handled with plenty of hand plunging throughout. Basket pressed into tank and left to mellow for 4 months. 2 rackings during this time and then hand bottled. Unfined and unfiltered with no additions. 11.5% 2442 bottles.
Not your average semillon. Savoury oxidative notes combine with citrus fruits and pith. The palate is creamy and textural from extended lees contact with integrated tannins which add another layer of complexity.
