Entropy Wines - Gippsland Red
The Red is Mostly Merlot from South Gippsland with a little whole bunch syrah from Baw Baw shire. Merlot was de-stemmed into tank for a month on skins, syrah was whole bunch for two weeks. Both were wild fermented then pressed into a single puncheon for ageing. The wine is light and bright with some nice crunchy tannin.
