Konpira Maru Admiral Ackbar Semillon
Admiral Ackbar is a refreshing yet textural semillon we make from the Quarry Ridge Vineyard, in Kilmore.
Grapes were harvested mid-April, de-stemmed and fermented as whole berries. They get pressed immediately, following completion of primary ferment ensuring that it maintains primary fruit (it has an almost jube-like juiciness) as well as that beautiful texture you get from semillon skins.
This was Al’s favourite wine of the 2017 vintage.

100% Semillon, whole berry fermented in the roto-fermenter, ¼ turn each day for a light ‘massage’ of the cap. Pressed after two day post-ferment maceration. Racked twice and bottled. 10.5% 3100 bottles.
Textural and herbal edge with an underlying juiciness that is often seen from these grapes giving an almost jube character.
